(about 2 servings) Ingredients & Directions for Homemade Manicotti Shells: 1 egg, well beaten 1 cup milk 1/2 teaspoon salt 1 cup flour In a bowl, add egg and beat well. Add 1 cup milk and 1/2 teaspoon salt to the beaten egg, mix well. Add 1 cup of flour, mixing thoroughly, then set aside. The next process is similar to pancakes, but not exactly: Brush a small amount of oil on a teflon coated frying pan. Place teflon pan on low to medium heat. Pour about 1/8 cup of the prepared batter in frying pan. Either tilt pan back and forth, or use a spoon to move the batter to spread it evenly. Cook slowly UNTIL SET, do not brown. When the side is set, flip it over and let the other side set. Slide out of pan and onto a plate to cool slightly. Repeat until all batter is used, approximately 8 shells. Ingredients & Directions for Stuffed Manicotti Shells: 1 egg, well beaten 16 oz. Ricotta Cheese 1 Tablespoon Parsley Flakes 8 oz. Mozzerella Cheese 15 oz. can of your favorite Pizza Sauce or Spaghetti Sauce In bowl, add egg and beat well. Stir in 16 oz. Ricotta Cheese, mix well. Sprinkle mixture with 1 Tablespoon Parsley Flakes and mix well. Place about 3 - 4 Tablespoons of Ricotta Cheese mixture onto shell. Move the mixture, in the middle of shell only, up and down shell with fork. Flip one edge of shell over Ricotta Cheese mixture and roll shell to hold filling in it. Arrange shells side by side in a 9 x 13 baking pan. Pour your favorite sauce on top of shells. Top with 8 oz. Mozzerella Cheese. Cover with aluminum foil. Bake at 400 degrees for about 20 - 30 minutes. Yield: About 8 Manicotti Shells. May be served with Garlic Bread/Buns/Toast, the choice is yours!
